As a general rule, I don’t believe in salads.  I hate that they are a convenient way to eat “healthy” when many are loaded with fatty dressings, eggs, croutons, etc. until you might as well have a hamburger.  Salads seem boring, dreary, lazy.  In fact, there is only one thing that can perk a salad up in my book:

Spinach saladohhhhhh yeah

BACON.  Hot bacon dressing on spinach?  That’s not a salad! That’s tasty tasty goodness that happens to be raw veggies.

To make dressing:

Chop and cook 12 slices of bacon.  Set aside.  Sautee chopped shallots in the remaining bacon fat until fragrant and brown.  Add 1/2 c malt vinegar (this was VERY sour, cider vinegar may be used in the future), salt, pepper, and a dab of mustard.  Swirl until nice and hot, add sugar to taste.  Pour over spinach.  Should be enough dressing for 4 servings.
