Pimento cheese. Pretty tasty. Hard to go wrong. But, everything’s better when you make it from scratch, right? Bonus: you can make this drunk. Try not to get any on your going out clothes, but being a bit tipsy makes squishing the cheese around that much more fun.

Half a pound each white cheddar and yellow cheddar, grated. Mix with almost a cup of mayo, 7 oz chopped pimentos, pepper, salt if wish. Squish around until well mixed. Serve, I like with chopped jalapenos on top.
